Quesadillas 3 Ways

3 epic quesadillas recipes to spice up your summer!

MEXICAN-INSPIRED

Serves: 4

Prep Time: 30 minutes

Ingredients

  • 8 whole wheat tortillas
  • Extra virgin olive oil
  • 2 cups salsa
  • 2 cups grated cheddar cheese
  • 1 cup black beans
  • 1 cup cilantro, coarsely chopped

Lime Sour Cream Dip

  • ½ cup sour cream
  • Zest and juice of one lime
  • Sea salt, freshly ground black pepper, to taste
  • Salsa

Directions

1. For each quesadilla, place a tortilla on a plate and fold in half to see a ‘line’. Unfold and spread ingredients on one half of the tortilla. Evenly spread the tortilla with ¼ cup salsa, ¼ cup cheese, 1/8 cup black beans & cilantro. Fold the tortilla in half.

2. Heat a large frying pan over medium heat for a minute, add a drizzle of olive oil and heat for another minute. Place the loaded, folded tortilla on the frying pan and place another tortilla beside it. Cook until browned on the bottom, then flip and cook until browned on the other side, a few minutes per side.

3. Remove the tortilla and cut into wedges with a pizza cutter. If making several quesadillas at once, keep them warm in a 300°F oven.

4. Mix sour cream, lime zest and juice, salt and pepper. Serve warm tortillas with lime sour cream dip and salsa.

GREEK-INSPIRED

Serves: 4

Prep Time: 30 minutes

Ingredients

  • 8 whole wheat tortillas
  • Extra virgin olive oil
  • 2 cups fresh spinach
  • 1 bunch spring onions
  • 1 jar roasted red peppers
  • 1 jar black olives
  • 1/2 cup feta cheese crumbled
  • 1 1/2 tablespoons fresh chopped oregano (or 2 teaspoons dried)

Directions

1. Chiffonade (thinly slice) the spinach. Thinly slice the spring onions and the desired amount of roasted red peppers and black olives.

2. For each quesadilla, place a tortilla on a plate and fold in half to see a ‘line’. Unfold and spread ingredients on one half of the tortilla. Evenly spread the tortilla with 1/4 of the spinach, spring onion, roasted red peppers, black olives, feta cheese, and oregano. Fold the tortilla in half. Follow steps # 2/3 as above.

DESSERT-INSPIRED ~ Chocolate Almond Butter

Serves: 4

Prep Time: 30 minutes

Ingredients

  • 8 whole wheat tortillas
  • Almond butter
  • Dark chocolate chips, 80% cocao
  • Peanuts, coarsely chopped (or your favourite)
  • Cinnamon

Directions

1. For each quesadilla, place a tortilla on a plate and fold in half to see a ‘line’. Unfold and spread ingredients on one half of the tortilla. Evenly spread the tortilla with almond butter, sprinkle with chocolate chips, peanuts and sprinkle with cinnamon. Fold the tortilla in half.

2. Heat a large frying pan over medium heat for a minute. Place the loaded, folded tortilla on the frying pan and place another tortilla beside it. Cook until lightly browned on the bottom, then flip and cook until lightly browned on the other side, a few minutes per side.
