Asian Cabbage Salad

This perfect summer salad takes minimal time, lasts up to a week in your fridge and and gets better each day that it sits in this delectable dressing. You can enjoy this crunchy tasty salad as a side to any barbeque bash or serve it up as a main dish and top it off with some protein of your choice! Take it to the next level with seared shrimp, roasted chicken or fried tofu!

For the slaw combine (raw):

  • 1 cup of shredded cabbage
  • 1 cup shredded carrot
  • ½ cup of shredded beet

For the dressing combine:

  • ½ cup natural peanut butter
  • 2 tbsp of soy sauce
  • ½ tsp lemon juice
  • 1 tbsp of maple syrup
  • 1 tbsp of sesame seed oil
  • 4 minced garlic cloves
  • 1 tsp fresh grated ginger
  • Salt and pepper to taste
  • Chili pepper flakes to taste if you want a spicy kick

Once you’ve loosely mixed the dressing with the raw slaw, top it off with some chopped organic peanuts, chopped green onion and fresh cilantro.
