Chocolate Mint Bars

These frozen, no-bake bars will fulfill your vegan, paleo, gluten-free needs in the most delicious way!

Ingredients

Bottom:

  • cup of coconut flakes
  • 1/4 cup coconut oil
  • ¼ cup coconut manna
  • tsp peppermint
  • 1/4 cup xylitol

Middle:

  • Hard part of can of coconut milk
  • 1/4 cup organic icing sugar

Topping:

  • 1/4 cup cacao
  • 1/4 cup coconut oil
  • 1/4 cup maple (less if you use cocoa)
  • Sprinkle of coconut flake

Directions

  1. Mix bottom layer and press into bottom of pan
  2. Mix middle layer and freeze on top of bottom layer
  3. Mix top layer and spread over middle layer, sprinkling coconut on top
  4. Cut and enjoy when solid!
