Autumn-Inspired Energy Bites for Your Afternoon Pick-Me-Up

These delicious little energy bites are extremely nutritious, packed full of protein, vitamins and minerals!

Chocolate Pumpkin Spice & Seed

Makes 40 energy bites/Prep Time 20 Minutes

Ingredients

  • 3 ΒΌ cups oats (I used whole rolled oat flakes)
  • 1 cup pumpkin puree, tinned
  • 1 cup pumpkin seed butter
  • 1/2 cup maple syrup
  • 1/2 cup chia seeds
  • 1/2 cup chocolate chips
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tbsp vanilla
  • 2 tbsp cocoa powder
  • 1/4 tsp Himilayan sea salt

Directions

  1. Add all ingredients to a large bowl, mix well.
  2. Form 1-inch balls and place on a baking sheet. Cover and freeze for one hour before eating!
  3. Store in the fridge or freezer.

Chocolate Chip Sunflower Seed Chia

Makes 24 energy bites/Prep Time 20 Minutes

Ingredients

  • 1 cup oats (I used whole rolled oat flakes)
  • 1 cup sunflower seed butter
  • ΒΌ cup chia seeds
  • 2 Β½ tablespoons honey
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 2 Β½ tablespoons cocoa powder
  • 1/4 tsp Himilayan sea salt
  • ΒΌ tsp cinnamon
  • 1/3 cup dark chocolate chips (70% cocoa plus)

Directions

  1. Add all of the ingredients into a large mixing bowl and mix until well-blended. Mix well.
  2. Roll into 1-inch bites and place on parchment paper inside an airtight container. Chill and enjoy!

Cinnamon Sunflower Seed

Makes 15 -16 energy bites/Prep Time 20 Minutes

Ingredients

  • 10 large dates pitted, soaked in hot water
  • 1 cup sunflower seeds
  • 1 tablespoon chia seeds
  • Β½ cup pumpkin seed protein powder
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 6 tablespoons coconut or almond milk or your favourite milk (add more if mixture is dry)!

Directions

  1. Drain dates and finely dice.
  2. Add all ingredients to a large bowl, mix well.
  3. Form 1-inch balls and place on a baking sheet. Cover and freeze for one hour before eating!
  4. Store in the fridge or freezer.

Chocolate Mint Sunflower Seed

Makes 15 energy balls/Prep Time 20 minutes

Ingredients

  • Β½ cup pumpkin seed protein powder
  • 2 tbsp honey

  • 1/4 tsp Himilayan sea salt
  • 4-6 tablespoons coconut or almond milk or your favourite milk (add more if mixture is dry)!

Directions
